If you’ve visited our hotel previously, then you’re well acquainted with Vincent Gomis’ style. His two seasons as Sous Chef at Le Barth, plus his vast culinary background in restaurants such as the one at Paris Palais Park Hyatt, Le Bristol Paris, and many more- some of them even being Michelin-starred entities - promise a unique, tasteful experience.
Vincent decided to make a home on our island because of its ambiance and refreshing energy, both qualities that inspire his work, creative as can be when talking about the culinary arts. His journey luckily brought him to our beautiful St Barts restaurant, Amis and its unique Mediterranean dishes, carefully crafted by skilled hands, experienced minds and fresh ideas.
Meet The Right Hands
Every Captain is just as strong as his Right Hand is, and we can certainly say that Marie Cécile, chef Vincent’s right hand, is the best companion for him both in the kitchen and in life, as they are a happily married couple as well. Their synergy is something we don’t see every day, and their teamwork is certainly one of the many gifts that makes their cuisine so strongly unique.
Marie Cécile has vast experience and is also masterfully skilled, and altogether with Vincent, they bring their creativity and freshness to Amis for everyone to enjoy.
Sous-chef Mathieu Oysellet
Well-acquainted with Vincent Gomis style, sous-chef Mathieu Oysellet has been cooking in St. Barts, by Vincent’s side, for the past three years. Mediterranean cuisine is his inspiration –just picture: he vacations every year in Ramatuelle!– and together with his vast experience in top-tier restaurants such as Quai des Saveurs or at the Castelblanc Hotel & Spa, allow for a well-seasoned style that couldn’t feel more at home and adequate for Amis.
Together with Vincent and Marie Cécile, this skillful team of chefs promises a tasteful, once-in-a-lifetime kind of meal in the culinary heart of the island.
